Martin Boetz – Fried Eggs or Son In Law Eggs

Ingredients:

  • 4 eggs
  • 600ml vegetable oil
  • 20g fried shallots
  • 20g fried garlic
  • 5g coriander, leaves picked
  • 1 long red chilli, sliced finely on the diagonal

SWEET FISH SAUCE

  • 250g palm sugar
  • 1 lemongrass stem (inner core only), roughly chopped
  • 3 kaffir lime leaves
  • 3cm piece galangal, roughly chopped
  • 2 tbs fish sauce
  • 2 tbs tamarind paste

Method:

EGGS

  1. In a wok heat the oil to between 160-180 degrees.
  2. Crack eggs one by one into a small bowl and gently add to the hot oil (the egg should bubble and form a crisp outer skin within 30-40 seconds).
  3. The egg will be floating in the oil at this point turn it over and continue cooking for anther 30 seconds
  4. Removed with a slotted spoon and drain on absorbent paper. Continue with the remaining eggs.

SWEET FISH SAUCE

  1. Coarsely grate palm sugar and place in a saucepan over medium heat. Cook, stirring for 4-5 minutes until palm sugar melts.
  2. Add lemongrass, kaffir lime leaves and galangal.
  3. Reduce heat to low and cook for a further 10 minutes.
  4. Carefully add fish sauce and tamarind paste (mixture may spit) and stir to combine.
  5. Strain through a sieve into a bowl. Cool to room temperature.

ASSEMBLY

Place eggs on serving plates, cover the eggs with the sweet fish sauce and generously garnish with fried shallots, garlic, coriander and fresh sliced chilli. Serve immediately.
